Fro-Yo Bark

Ingredients

  • 1 x shot expresso coffee or 1 tsp instant coffee powder in 1/4 cup boiling water

  • 1 1/2 cups Greek style natural yoghurt

  • 1/2 cup oat clusters or nuts of choice

  • 1/2 cup mixed frozen or fresh berries

  • 2 tbsp dark chocolate chips, roughly chopped

Method

  • Line a 20cm x 20cm baking pan with baking paper, allowing some to overhang.

  • Place coffee in a bowl and allow to cool completely . Add the yogurt to the bowl and stir well with the coffee mixture. 

  • Spread yoghurt mixture thinly over base of prepared pan. Sprinkle with oat clusters/nuts and fruit

  • Freeze, uncovered, for 6 hours or overnight. Roughly break into pieces. Serve immediately.
