Roast Chicken Bake
Ingredients
1 onion sliced across into rings
6 potatoes peeled and cut into chunks
2 carrots sliced into pieces
1 broccoli head
1 cup frozen broad beans, shelled
2 tbsp olive oil
4 pre package chicken pieces or a whole roast cut into pieces
1 lemon or lime zested and juiced
2 cloves of garlic finely grated
1 tsp paprika
1 tsp dried thyme
Method
Heat the oven to 180C fan forced. Put the veggies (except broccoli) and oil in a non-stick roasting tin and toss everything together. Rub the chicken with the lemon/lime, garlic, paprika and thyme, salt and pepper. Add the chicken pieces to the veg, in the roasting tin and roast for 30 mins, then ad 100mL of water and the broccoli to the baking tray. Roast for a further 20-30 mins until chicken and veg are cooked through and golden.
Remove from oven and cover with the foil and cool for 10 mins until the broccoli is just tender.
